Carrot & Coconut Bars

Take carrots and coconuts to the next level and try out these tasty homemade bars.

Also ideal to eat as a snack at your work place.

You will need:

Lamb Brand Demerara Sugar 300g

Lamb Brand Self-raising Flour 250g

Lamb Brand Coconut 100g

Lamb Brand Sultanas 100g

Lamb Brand Walnuts 25g, chopped

Lamb Brand Ground Cinnamon 2 tsps

Lamb Brand Vanilla Powder ½ tsp

Carrots 100g, grated

Vegetable Oil 100ml

Butter 100g, melted

Eggs 2, beaten

All you have to do is:

1. Grease and line a 28cm by 18cm baking tin and preheat the oven to 180C.

2. Sift flour and cinnamon into a bowl. Stir in the sugar, coconut, sultanas, walnuts and carrots.

3. In another bowl mix the eggs, vanilla essence, butter and oil.

4. Add to the flour mixture and stir well.

5. Pour into the baking tin, level the top and cook on the middle shelf for 35 to 40 minutes until golden brown and firm to touch.

6. Allow to cool in a tin for about 10 minutes, and then turn out onto a wire rack to cool.

7. Cut into thick slices and serve.
