Almond Cookies

If you are busy and always on the go with no time on your hands to bake Easter Figolli, we suggest that you try this recipe alternative!  These Almond Cookies are just scrumptious :) 

Makes 12 to 15 cookies. 

You will need:

Lamb Brand Self-raising Flour 200g

Lamb Brand Pure Ground Almonds 200g

Lamb Brand Castor Sugar 200g

Lamb Brand Blanched Almonds 100g, roasted and chopped - optional for decoration

Lamb Brand Vanilla Powder, pinch

Margarine 50g

Eggs 2, beaten

Lemon Rind, finely grated

All you have to do is:

1. Preheat the over to 180 degrees C.

2. In a large bowl, sieve the flour and rub in the margarine until the mixture is crumbly.

3. Add the pure ground almonds, lemon rind and vanilla powder and mix well.

4. In a separate bowl beat the sugar with eggs.

5. Gradually add the sugar mixture into the flour mixture until a smooth dough is obtained.

6. Roll out the dough onto a floured surface and cut shapes using cookie cutters.

7. Place the cookies on a lined baking sheet and bake for 20 minutes or until golden.

8. Let cool completely on a wire rack and decorate.
