Lemon Butter Biscuits - LBS53

These lovely lemon butter biscuits are easy to make and taste delicious. A good treat for all family and friends.


Makes: 30

You will need:

Lamb Brand Plain Flour, 200g

Lamb Brand Castor sugar, 100g

Lamb Brand Plain Flour, for dusting

Lamb Brand Demerara sugar, 3 tbsp.

Lamb Brand baking powder, ¼ teaspoon

Lamb Brand Cooking Salt 1 pinch

Butter, 125g (room temperature)

Egg, 1

Zest of 2 lemons


All you have to do is:

1.Beat the butter and sugar in a bowl with an electric mixer until creamy. 

2.Beat in the egg until the mixture is light and fluffy.

3.Add the flour, lemon zest, baking powder and salt and mix until you have a ball of dough. Cover and place in the fridge for 2 hours, or until firm. 

4.Preheat your oven to 180°C. 

5.Roll out the dough on a floured surface until ½cm thick. 

6.Cut out shapes and place on a grease proofed tray. Sprinkle with Demerara sugar and bake for 10 to 12 minutes until the edges are light brown. 

7.Transfer to a wire rack to cool.
