Sorbet with Fresh Summer Fruit - LBS30

Beat the summer heat with these heavenly tasty sorbets..... choose your favourite summer fruit and turn it into a sorbet.

 

Sorbet is a frozen dessert made up of water, fine sugar and fruit juice. Normally, sorbet is softer than ice cream. Most of the time it also contains a low level of fats compared to other dessert, since its made from water instead of milk. Sorbet can be either taken as dessert or in between the first and second course, to eliminate heavy flavours.

 

Makes 8 portions
Preparation and Cooking: Approx 30 minutes

Lamb Brand Castor Sugar* 400g

Fresh Fruit 550ml, juice (fruit of your choice)

Water 550ml

Fresh Mint for garnish

* If you use sweet fruits such as melons you can reduce the amount of sugar.

Mix the Castor Sugar with water, add to a sauce pan and cook for about 5 minutes then let it set until cold.

Slice the fruit and pass through a blender or juicer until you have 550ml of juice. Mix the juice together with the cold castor sugar mixture.

Add to a shallow dish, cover and freeze for about 3 to 4 hours or until almost frozen solid.

Pass the frozen mixture through a blender and freeze again, repeat this process twice more. Remove from freezer 15 minutes before serving; serve by use of a scooper and garnish with mint leaves.
