St. Martin's Cake

Recipe by Shania Cardona, Senior category for Lamb Brand Kids Competition during Kwalita Malta 2016.

You will need:

Lamb Brand Walnut Kernals 200g

Lamb Brand Sultanas 75g

Lamb Brand Candied Peel 50g

Lamb Brand Flour 5 tbsp

Lamb Brand White Granulated Sugar 5 tbsp

Lamb Brand Cinnamon 1/2 tsp

Lamb Brand Ground Cloves 1/4 tsp

Lamb Brand Red Almonds, handful

Vita Natura Dates 200g

Vita Natura Figs 100g

Eggs 2, seperated

Milk 2 tbsp



All you have to do:

1. Pre-heat the oven to Gas 180 degrees.

2. Grease the tin and sprinkle it with flour shaking off any excess.

3. With an electic whisk, beat the egg-whites until they are fluffy.

4. Then add the yolks, sugar, flour and milk.

5. Combine them well and then fold in the dates, figs, nuts, sultanas and candied peel.

6. Pour the mixture into the tin and bake for 30 minutes.  

7. Once ready, place the almonds on top for some decoration and let cool in the tin for 10 minutes. Then turn it onto a wire rack to cool.
