Blueberry Pancakes

This Blueberry Pancakes recipe is so easy to whip up, and it makes soft and fluffy pancakes that are hard to beat!

You will need:

For pancakes:

Lamb Brand Plain Flour 350g

Lamb Brand Granulated Sugar 2 tbsp.

Lamb Brand Vanilla Powder 2 tsp.

Lamb Brand Baking Powder 2 tsp.

Lamb Brand Bicarbonate of Soda ½ tsp.

Milk 500ml

Blueberries 100g, plus more to decorate

Coconut Oil 4-5 tbsp. 

Melted Butter 4 tbsp.

Eggs 2

 

For maca caramel sauce:

Lamb Brand Table Salt, pinch

Water 275ml

Dates 140g

Maca Powder 1 tbsp. 

All you have to do is:

1. Prepare the maca caramel:

  a. Pulse all ingredients together in a blender. Place the mixture in the refrigerator for about an hour.

2. Prepare the pancakes:

  a. Whisk the eggs with sugar and vanilla in a large mixing bowl.

  b. Warm up the milk slightly and pour into the egg mixture. Add the melted butter and mix.

  c. In a separate bowl, mix the flour with bicarbonate of soda and baking powder.

  d. Add the dry ingredients to the milk and egg mixture.

  e. Add the blueberries to the batter and quickly mix everything to combine, but avoid over mixing. Leave it to rest for 5-7 minutes.

  f. Heat the frying pan over medium heat. Add a tablespoon of coconut oil then add a ladleful of the batter on the frying pan leaving some space between pancakes. Turn heat to low and cook until golden, then flip to the other side and cook for another few minutes until golden.

  g. Serve warm with caramel sauce and fresh berries.
