Frosted Mini Valentine's Cake

Serve your loved ones this easy-to-decorate Valentine's Cake. Its great to look at and the taste is amazing. 

You will need:

For the cake

Lamb Brand Self-raising Flour 260g

Lamb Brand Castor Sugar 100g

Lamb Brand Table Salt 1/4 tsp

Rayner's Red Food Colouring Yoghurt 245g

Vegetable Oil 180ml

Lemon Juice 3 tsp

Eggs 2

Zest of 2 Lemons

For the frosting

Lamb Brand Icing Sugar 200g

Lamb Brand Vanilla Powder 1 tsp

Margarine 100g

Rayner's Pink Food Colouring

Red and Pink Dredges

All you have to do is:

In a bowl, mix rind, oil, eggs and sugar with a fork. Add remaining ingredients and combine well. Divide the mixture into 3, adding food colouring to 2 parts to turn pink and red. Pour into 3 greased and lined cake tins and bake at 180C for 30 minutes. Leave to cool then turn out.

Meanwhile prepare the frosting by mixing all the ingredients together in an electric mixer for 5 minutes until light and fluffy. Use the frosting to sandwich the 3 cakes together and ice the top and sides. Decorate with coloured dredges and serve.
