Royal Icing

Royal Icing is a pure white icing that dries to a smooth, hard, matte finish. Royal icing is perfect for making decorations that last.

You will need:

Lamb Brand Icing Sugar 400g

Egg Whites 2 small

Fresh Lemon Juice 2 tsp

All you have to do is:

1. Mix all ingredients together in a food processor until you get a soft peak. 

2. To colour, divide the paste in different containers and add a small amount of food colouring and mix well.

3. Important: Royal Icing has the tendency to dry very quickly, so keep it covered in an airtight container when decorating. Adding a few drops of glycerin will give a softer consistency and will prevent from drying fast.
