Herbed Cheese Scones with Sundried Tomatoes & Chilli

Whip up a batch of lovely herbed cheese sundried tomato scones for a quick and tasty snack. These savoury scones are perfect party food.

All you need is:

Lamb Brand Wholemeal Flour 250g

Lamb Brand Plain Flour 250g 

Lamb Brand Baking Powder 2 tsp

Life Sun-Dried Tomatoes 100g, chopped 

Milk 400ml

Cheddar Cheese 200g, grated

Parmesan Cheese 100g, grated

Egg 1, lightly beaten

Mixed Italian Herbs 1 tsp 

Chilli Flakes pinch

 

All you have to do is:

1. Place both flours, baking powder, mixed Italian herbs, chilli flakes, cheddar cheese, 1/2 of the Parmesan cheese and the chopped sun-dried tomatoes into a large bowl and mix with a spoon to combine.

2. Add in the milk and bring the ingredients together with the spoon. The mixture will be a little sticky at this point. 

3. Tip the mixture onto a lightly floured surface and knead into a ball. 

4. Flatten or lightly roll the dough to 2.5cm thick. Use a 6cm round cutter to cut out 15 scones. 

5. Place them onto a baking tray lined with greaseproof paper. 

6. Brush the tops of the scones with the beaten egg and sprinkle over the remaining Parmesan cheese. 

7. Cook the scones in the oven at 220oC for 15-17 minutes until the scones are risen and golden-brown. 

8. Serve the scones either warm or cold.
