Lentil & Pumpkin Soup

Preparation & Cooking time:

You will need:

Lamb Brand Red Lentils, ½ cup

Lamb Brand Rosemary pinch

Lamb Brand Basil pinch

Lamb Brand Cumin pinch

Lamb Brand Fine Table Salt to taste

Lamb Brand Ground Black Pepper to taste

Red Pumpkin, 1 kilo

Large Onion, 1 chopped

Garlic, 4 cloves

Celery, 4 stalks


Tomato paste, 1 tbsp

Olive oil, 2 tbsp

Thyme pinch

Butter, 1 tbsp 

All you have to do:

In a large saucepan cook pupmkin, celery, garlic and onion for around 5 minutes. Add water to cover all ingredients, add remaining ingredients and bring mixture to a  boil. Reduce heat to low and leave to simmer until 40 minutes or until lentils are tender. Blend mixture using a blender and serve.
