Radish & Almond Barley Salad

If you weren't aware that Summer is on its way, this salad is here to serve as a tasty reminder.

Try it out for a day by the beach :)

You will need:

Lamb Brand Barley 130g

Lamb Brand Red Almonds 100g

Lamb Brand Golden Raisins 60g

Red Radish 120g

Rucola 120g

Parsley Leaves 100g, minced

Mint Leaves 50g, shredded

Shallots 2, minced

Olive Oil

For the Pinenut, Basil & Balsamic Dressing

Lamb Brand Pinenuts 40g, bashed and crushed

Lamb Brand Coarse Sea Salt, to taste

Lamb Brand Ground Black Pepper, to taste

Olive Oil 6 tbsp

Balsamic Vinegar 3 tbsp

Handful Basil 1

Clove of Garlic ½, bashed and chopped

All you have to do is:

1. Bring a large pot of heavily salted water to a boil.

2. Add the barley and cook until just tender, about 25 minutes.

3. Drain the grains into a colander, then set aside until warm to the touch.

4. Combine all the ingredients in a large bowl and toss well.

5. Season with salt to taste.

6. Making the dressing; mix all the ingredients together and season.
