Enjoy this satisfying vegetarian meal! A generous bulgur salad with juicy tomatoes and crumbled goat cheese.

You will need:

 

Lamb Brand Medium Bulgur Wheat 70g

Lamb Brand Mixed Nuts25g, crushed

Lamb Brand Table Salt

Lamb Brand Ground Black Pepper

Cherry Tomatoes 200g, halved

Sliced Green Olives 100g

Fresh Goat Cheese 50g, crumbled

Olive Oil 2 tsp

Red Wine Vinegar 1 tbsp

Small Shallot 1/2, minced

Fresh Parsley, chopped

 

 

All you have to do is:

1.  In a heatproof bowl, mix bulgur wheat with 1/4 teaspoon salt and 1 cup boiling water.

2.  Cover, and let stand until tender but slightly chewy, about 30 minutes.

3.  Drain bulgur in a fine mesh sieve, pressing to remove liquid; return to bowl.

4.  Add tomatoes, parsley, shallot, vinegar, and oil.

5.  Season with salt and pepper and toss.

6.  Top with cheese and crushed nuts.
