Sun Dried Tomato and Pine Nut Sausages

Serve these homemade sausages with veggies, on a hotdog bun, or a sandwich, and add a little potato mash to the side. Try your own added ingredients and prepare sausages to your likings. 

You will need:

Lamb Brand Breadcrumbs 160g

Lamb Brand Sun-Dried Tomatoes 100g

Lamb Brand Pine Nuts 60g

Lamb Brand Table Salt, to taste

Lamb Brand Ground Black Pepper, to taste

Cheddar Cheese 120g, grated

Fresh Parsley 4 tbsp, finely chopped

Eggs 2, lightly beaten

All you have to do is:

1. Preheat the oven to 200°C.

2. Place the sun-dried tomatoes in a food processor and blitz until well chopped.

3. Combine the sun-dried tomatoes and breadcrumbs in a large bowl with the chopped parsley, pine nuts, grated cheddar, and plenty of seasoning.

4. Add the eggs, and mix well.

5. Form the mixture into 4 – 8 sausage shapes, and lay them out on a lightly greased baking tray (alternatively, you could make patty shapes).

6. Bake for around 25 minutes, until firm and golden brown.
