Grilled Peppers Stuffed with Halloumi

Stuffed Peppers with a healthy and delicious twist! Worth a try...

Makes: 8 Stuffed Peppers

All you will need is:

Lamb Brand Salt & Pepper, pinch

Red, orange and / or yellow peppers, cut in half lengthwise, cleaned and de-seeded, 4

Olive oil, 2 tbsp.

Halloumi, cut into 4cm cubes (to fit the inside of the pepper halve), 200g

For the dressing:

Lamb Brand Pine Nuts, toasted, 2 tbsp.

Lamb Brand Parsley / Basil / Mint Fresh Lemons, squeezed 2

Olive oil, 4 tbsp.

Water, to thin it out 2-3 tbsp.

Garlic clove, minced or finely chopped 1

Red chilli, de-seeded and finely chopped 1

All you have to do is:

  1. Prepare grill on medium. 
  2. Drizzle the peppers with olive oil, season with salt and pepper, and place on hot grill, skin side up. 
  3. Grill the peppers for 5-8 minutes or until beginning to soften. 
  4. Turn peppers over and put a piece of halloumi inside each pepper and grill for a further 5-8 minutes until the cheese starts to soften. 
  5. Prepare the dressing by whisking all the dressing ingredients together. 
  6. Serve the peppers with the dressing drizzled over.
