Bulgur Pilaf with Toasted Almonds & Dried Fruit

Fluff up your ideas with this light pilaf, full of succulent slivers of dried apricot and prunes and crunchy toasted nuts.

 

You will need:

Lamb Brand Bulgur Wheat 175g

Lamb Brand Flaked Almonds 50g

Lamb Brand Prunes 50g, sliced

Lamb Brand Dried Apricots 50g, sliced

Lamb Brand Cinnamon 1/2 tsp

Lamb Brand Fine Table Salt, for seasoning

Lamb Brand Ground Black Pepper, for seasoning

Vegetable or Chicken Stock 350ml

Olive Oil 2 tbsp

Red onion 1, sliced

Olive Oil 2 tbsp

Handful of Fresh Coriander Leaves

 

All you have to do is:

1. Heat 1 tablespoon of the oil in a large saucepan. Add the onion and fry, stirring often, until the onion is tender. 

2. Add the bulgur wheat and cook, stirring, for 1-2 minutes to lightly toast the grains. 

3. Pour the stock into the saucepan, stir well, then bring to a boil. 

4. Cover and reduce the heat so that the pilaf only simmers. Cook for 15 minutes, until all the liquid is absorbed. Remove from the heat and set aside to stand, still covered, for about 5 minutes. 

5. Meanwhile, in a small non-stick frying pan, heat 1 tablespoom olive oil. Add the almonds and cook, stirring often, until golden. 

6. Using a slotted spoon, remove the nuts to a dish and set aside. 

7. Add the dried fruit and cinnamon to the frying pan and cook, stirring, for 2-3 minutes until the fruit is plump and lightly browned. 

8. Remove the lid from the pilaf and fluff up the grains with a fork. 

9. Carefully fold the toasted nuts and fruit into the pilaf, then gently add the coriander. 

10. Season to taste with salt and pepper and serve hot, warm or cold.
