Serves 4

All you need is:

Lamb Brand White Quinoa 400g

Lamb Brand Pumpkin Kernels 150g

Lamb Brand Table Salt, to taste

Lamb Brand Black Pepper, to taste

Fiamma Artichoke Hearts in Sunflower Oil 180g, chopped

Fiamma Sundried Tomatoes in Sunflower Oil 170g, chopped

All you have to do is:

1. Rinse the quinoa under cold running water to remove its bitter flavour.

2. Bring 1.5l of salted water to a boil and pour in 400g of white quinoa.

3. Cook for 12 minutes, stirring occasionally.

4. Drain the white quinoa through a fine mesh strainer and place it into a bowl and allow it to cool.

5. In the meantime chop the artichoke hearts and sundried tomatoes and place them into a clean bowl. Reserve some of the sunflower oil from the sundried tomatoes for later use.

6. Stir in the pumpkin kernels to the chopped ingredients.

7. Now stir in the pumpkin kernels, sundried tomatoes and artichoke hearts into the warm quinoa and pour over the salad the reserved sundried tomato oil.

8. Taste a spoonful of the TAP salad and add salt or pepper to taste.

9. Serve and enjoy!
