Mixed Bean Soup

Yields 4-8 portions

This recipe was cooked during Kwalita Malta 2016 by Chef Alessandro. 

Kindly note that beans are very rich in vitamin B, in which they are a good replacement to meat. This soup is very recommended to vegans and vegetarians.

 

You will need:

Lamb Brand Black Eye Beans 200g

Lamb Brand Red Kidney Beans 200g

Lamb Brand Soya Beans 200g

Lamb Brand Black Ground Pepper, to taste

Lamb Brand Salt, to taste

Mushrooms medium sized, 5

Onion 1

Vegetable Stock

Water

Dash of Cream 

All you have to do is: 

1. Soak the beans in water for at least 5 hours or overnight. Then rinse.

2. Roughly cut the vegetables.

3. Put all the ingredients in a pot and cover with water.

4. Bring to the boil for 30 minutes and then simmer for another 30 minutes, stirring occasionally.

5. Season with salt and pepper.

6. Blend soup with a touch of cream for a smoother and finer taste.

7. Let it set and serve.
