Spinach, Broad Bean & Feta Wrap

A light salad full of good-for-you greens, and made more filling with couscous. You can serve this delicious food either as a salad or give it a twist in a wrap.

You will need:

Lamb Brand Couscous 250g

Lamb Brand Broad Beans 200g

Lamb Brand Durum Flour Tortillas 2

Lamb Brand Table Salt, to taste

Lamb Brand Ground black Pepper, to taste

Feta Cheese 200g

Baby Spinach Leaves 125g

Black Olives 85g

Fresh Mint 20g

Olive Oil

All you have to do is:

1. Prepare couscous with boiling water, according to the packet's instructions.

2. Meanwhile, boil broad beans according to instructions. Cool in a colander under the cold tap, then drain. Put baby spinach leaves into a colander and pour over boiling water to wilt. Refresh under cold water and squeeze dry.

3. Stir the broad beans, spinach, mint and the black olives into the couscous. Crumble in the feta. Drizzle with plenty of olive oil and season. Toss well.

4. If you are going to serve some wraps just place the salad mix in a soft flat bread and wrap it up.
