Melon with grilled Strawberries

A fresh fruit platter easy to make and ideal if do have some under-ripe strawberries. Sprinkle them with some icing sugar and grill them to bring out their flavour.  Serves 4

You will need:

Lamb Brand Icing Sugar 1 tbsp

Lamb Brand Ground Cinnamon 1 tbsp

Fresh Strawberries 120g

Dried Apricots 100g

Cantaloupe Melon ½

All you have to do is:

1. Preheat the grill to high.

2. Hull the strawberries and cut them in half. Arrange the fruit in a single layer; cut side up, on a baking sheet or in an ovenproof dish and dust with the icing sugar.

3. Grill the strawberries, for about 4 to 5minutes or until the sugar starts to bubble and turn golden.

4. Meanwhile, scoop out and discard the seeds from the half melon using a spoon.

5. Using a sharp knife, remove and discard the skin, then cut the flesh into wedges and arrange on a serving plate with the grilled strawberries.

6. Chop the dried Apricots and place around the melon and strawberries.

7. Sprinkle some cinnamon.

8. Serve immediately.
