Torta tal-Marmurat

This chocolate and almond tart (locally known as it-torta tal-marmurat) combines chocolate, almonds and sweet spices.  It is then coated with dark melted chocolate and decorated with royal icing. This tart is traditionally baked for special celebrations on the island.

You will need

For the pastry

Lamb Brand Plain Flour 200g

Lamb Brand Salt, pinch

Butter 100g

Egg Yolk 1

Zest of a Lemon


For the filling

Lamb Brand Pure Ground Almonds 125g

Lamb Brand Castor Sugar 60g

Lamb Brand Candied Orange Peel 50g

Lamb Brand Ground Cinnamon & Cloves

Sponge Crumbs 100g

Cocoa Powder 1 heaped tbsp

Marmalade 1 tbsp + 2 extra spoons

Egg 1

Zest and Juice of an Orange

 

For the frosting

Lamb Brand Castor Sugar 75g 

Lamb Brand Glace Cherries, to decorate

Icam Dark Chocolate 75g

Melted Butter 3 tbsp

Milk 2 tbsp 

Royal icing

 

All you have to do is:

Rub in all the dry ingredients with the butter, bind with the egg yolk and enough milk into soft dough. Line 4 x 12 cm. pastry tarts and brush with the extra marmalade.

To make the filling simply combine all the ingredients together, divide between the tarts. Bake in a moderate oven at 175`c for 35-40 minutes. To make the frosting, melt all the ingredients together in a bain-marie. Spread the choc frosting over the tarts and decorate with the royal icing and cherries.
