Crumb Topped Banana Muffins - LBS36

The topped crumb adds a more yummy experience to these fluffy and moist banana muffins.

 

Total time: 30 Minutes

Yields: 12

 

You will need:

Lamb Brand Self raising flour, 1 1/2 cups

Lamb Brand Table Salt, 1/2 teaspoon

Ripe bananas, 3 (mashed)

Sugar, 3/4 cup

Egg, 1 (lightly beaten)

Butter, 1/3 cup (melted)

Topping

Lamb Brand mixed nuts, 1/4 cup (chopped)

Lamb Brand brown sugar, 1/3 cup

Lamb Brand Plain flour, 1 tbsp.

Cinnamon, 1/8 tsp.

Cold butter, 1 tbsp.

All you have to do is:

1.In a large bowl, mix the flour and salt.

2.Mix bananas, sugar, egg and melted butter.

3.Stir into dry mixture just until moistened.

4.Fill muffin cups 3/4 full.

5.Combine brown sugar, plain flour, and cinnamon topping ingredients.

6.Cut in cold butter until crumbly.

7.Sprinkle over muffins.

8.Bake at 375 degrees Fahrenheit for about 20 minutes, until muffins test done.

9.Cool in pan for 10 minutes.
