Christmas Log

This is an easy no cook recipe. The Christmas log is popular with the whole family especially the kids; kids especially enjoy preparing this dessert with the help of parents or grandparents.

Makes 2 logs approx 30cm long and 6cm high

Preparation and Cooking time: Approx 60 minutes

For the Log

Lamb Brand Walnuts 200g

Lamb Brand Glace Cherries 150g

Lamb Brand Candied Peel 150g

Lamb Brand Hazelnuts 100g

Lamb Brand Almonds 100g

ICAM Milk / Fondent Chocolate Bar 150g

Plain Biscuits 450g

Condensed Milk 2 tins

Brandy 45ml

For Covering and Decorating:

Lamb Brand Icing Sugar 1 tbsp

ICAM Milk / Fondent Chocolate Bar 150g

Other decorations of your liking.

Roast the hazelnuts and Almonds in a preheated oven at 180oC for about 10 minutes until just a bit coloured. Crush the biscuits, walnuts, hazelnuts and almonds. Grate the chocolate.

Mix all the ingredients together with your hands.

Form the mixture in the shape of a log, wrap in waxed paper and store in the fridge for at least 12 hours.

Remove from the fridge and cover with ‘bain marie’ melted chocolate, once the chocolate dries, sprinkle over some icing sugar and decorate to your liking.
