Crunchy Orange & Cornmeal Biscuits

Polenta gives these simple biscuits a fantastic crunch. They are great with ice cream or simply a cup of coffee.

You will need:

 

Lamb Brand Polenta 257g

Lamb Brand Castor Sugar 177g

Lamb Brand Plain Flour 100g, sifted & some for dusting

Lamb Brand Table Salt, pinch

Butter 177g, at room temperature

Orange Zest 2

Eggs 2

 

All you have to do:

 

1. In a stand mixer beat the butter with the sugar for 7 minutes until starting to cream. 

2. Add the orange zest and mix. 

3. Add the eggs one at a time. Don't worry if the mixture curdles, the flour will put everything back together again. 

4. Add the sifted white flour and polenta, and mix until it comes together. 

5. Wrap in plastic film and chill for 1 hour. 

6. Pre-heat the oven to 175oC with rack in the middle position. 

7. Divide the dough in 4, leaving the remainder dough in fridge and roll out very thin, dusting the table top as needed. 

8. Cut into desired shapes or just irregular diamonds. 

9. Line baking sheets with parchment paper and put the biscuits on them. 

10. Bake the biscuits for 5 to 7 minutes or until light brown 

11. Let cool on a wire rack. 

12. Store in an airtight jar.
