Imbuljuta tal-Qastan

Imbuljuta is the traditional Maltese drink served after Midnight Mass on Christmas and New Year's Eve. It is the perfect recipe for those special nights where you want something hot, spicy and deliciously seasonal.

Serves: 6-8

You will need:

Lamb Brand Brown Sugar 4 tbsp

Lamb Brand Mixes Spice 2 tsp

Lamb Brand Fine Table Salt, pinch

Icam Dark Chocolate 40g

Shelled Chestnuts 100g, soaked overnight

Cocoa Powder 40g

Zest of 1 orange

Zest of 1 mandarin

Vanilla pod 1

Tot of Cointreau or Rum [optional]

All you have to do is:

1. Place the chestnuts in a medium saucepan with water, enough that the chestnuts are completely covered.

2. Add in all the ingredients and bring to the boil.

3. Reduce the heat to medium and simmer for about 45 minutes or until the chestnuts are tender.
