Snail Stew with Aioli

Snails have been considered a luxury food since the old times. Try out this traditional snail stew recipe.

You will need:

For the snails

Lamb Brand Bay Leaves 4

Lamb Brand Star Anise 2

Lamb Brand Mild Curry 2 tbsp

Lamb Brand Cumin 1 tbsp

Lamb Brand Mixed Spice 1 tbsp

Tomato Pulp 500g

Garlic cloves 5

Spring Onions 3

Snails 2kg

Celery Sticks 2

Fish Cubes 2

Dark Beer 2 bottles

Large Onion 1

Fennel Bulb ½

Bunch parsley, mint and basil

 

For the aioli

Lamb Brand Black Pepper, to taste

Lamb Brand Table Salt, to taste

Tuna in oil 60g

White Bread 4 slices

Tomato Paste 4 tbsp

Garlic Cloves 2

Fresh Mint 2 tbsp, chopped

Anchovy Fillets 1 small can

Red Chilli ½

Olive Oil ½ cup

Small bunch fresh parsley

All you have to do is:

1. For the aioli, blend well all ingredients together in a food processor and adjust with chilli and salt to your liking.

2. Put aside while you prepare the snails.

3. Wash well the snails in salted water for several times until well cleaned. In a large pan cover the snails with water add salt and boil until snails are completely cooked.

4. Meanwhile chop the garlic, onion, fennel, celery and spring onion and sauté in olive oil.

5. Add the curry, cumin, mixed spice and cubes and stir continuously until all browned add beer, bay leaves, star anise and mix well.

6. Drain well the snails once completely cooked and put immediately in the sauce.

7. Mix well add the tomato pulp and simmer for a few minutes, remove from heat and add the chopped fresh herbs.
