Crusty Roasted Leg of Lamb

This easy to do and appetising recipe is the ideal meal for Easter or any other holiday, serve with some side salad and potato croquettes.

Preparation and Cooking Time: Approx 180 minutes



Lamb Brand Breadcrumbs 200g

Lamb Brand Mixed Herbs 1 tsp

Lamb Brand Cooking Salt to taste

Lamb Brand Pepper to taste

Boneless Leg of Lamb 2 kg

Butter 2 tbsp, melted

Onion 1 large, thinly sliced

Chicken Stock 500ml

Apple 1 large, sliced

Olive Oil 3 tbsp

Place leg of lamb on a rack in a roasting pan. In a small bowl, combine the breadcrumbs, butter and seasonings; spread over meat. Place onion in pan;pour broth over onion. Bake, uncovered, in a preheated oven at 170°C for an hour and a half. Add the apple; bake 30 minutes longer or until meat reaches desired doneness (for medium-rare, a meat thermometer should read 145°C; medium, 160°C; welldone, 170°C). Let roast stand while cooking vegetables and croquettes before slicing.
