Minty Summer Rice Salad

Fresh and summery, this tasty salad is ideal to be prepared beforehand and enjoy lunch or dinner by the sea. Simply delicious.

You will need:

Lamb Brand Long Grain Rice 250g

Lamb Brand Cooking Salt, to taste

Lamb Brand Table Salt, to taste

Bunch of asparagus 250g, cut in bite-size pieces

Mini Mozzarella 2 x 125g packs, halved

Olive Oil 3 tbsp

Red Pepper 1, seeded and chopped

Mint Leaves 1 large bunch, shredded

Grated zest and juice of 1 lemon

All you have to do is:

1. Drop the rice into a pan of boiling salted water and cook for 10 minutes.

2. Toss in the asparagus and cook for a further 3-4 minutes until the rice is completely cooked and the asparagus is only slightly crunchy.

3. Drain into a sieve and hold under the cold tap until cool.

4. When the rice is cold, stir in the red pepper, oil, lemon zest and juice, mozzarella and mint leaves.

5. Season well.
