Soya Bean Vegetable Soup


Final Result

This colourful and flavourful vegetable soup is made even healthier with soya beans, which are packed with nutrients. A very simple and quick recipe for a tasty warm meal.

 

 

Preparation & Cooking Time: 40 minutes

Serves: 4

 

You will need:

Lamb Brand Soya Beans 100g

Lamb Brand Che’ Pasta Perline 100g

Lamb Brand Yellow split Lentils 50g

Lamb Brand Table Salt to taste

Lamb Brand Ground Cumin ¼tsp

Cauliflower Florets 100g

Sweet Corn 65g

French Green Beans 50g, roughly chopped

Spring Green Onions 10g, finely chopped

Onion ½ (about 40g), finely sliced

Garlic 2 cloves, finely chopped

Carrot 1 medium, cut in cubes

Vegeterian Stock Cube 1, crumbled

Water 1L

Soak the soya beans for a minimum of 5 hours or overnight, changing the water from time to time if possible. Rinse and drain soya beans and lentils seperately. In a pot add beans and lentils with 1L of water and cook on medium heat till beans are tender. Add the onions, garlic, sweet corn, carrots, cauliflower, French beans, cumin powder and and cook till the vegetables are tender.

Add the pasta, stock cube and simmer for another 2 to 3 minutes. Add the chopped spring onions and simmer for another 2 minutes. 

Serve hot.
