Lentils & Tuna Salad

Preparation and Cooking Time: 45 minutes
Serves:  4

You will need:

Lamb Brand Lentils Mix 400g

Lamb Brand Cannellini Beans 200g

Lamb Brand Black Beans 200g

Lamb Brand Fine Table Salt to taste

Lamb Brand Ground Black Pepper to taste

Life Sun-dried Tomatoes 4 diced

Canned Tuna 185g, drained

Fresh Coriander 2tbsp, chopped

Red Onion 1 small, chopped finely

For dressing:

Lamb Brand Ground Cumin ½tsp

Lamb Brand Ground Coriander ½tsp

Lamb Brand Fine Table Salt pinch

Lamb Brand Ground Black Pepper pinch

Virgin Olive Oil 3tbsp

Fresh Lemon juice 1tbsp

Wholegrain Mustard 1tsp

Garlic 1 clove, crushed

 

All you have to do:

Soak the beans separately for a minimum of 5 hours or overnight, changing the water from time to time, if possible. Rinse, add to small saucepan, cover the beans with water and bring to the boil. Simmer the beans gently till cooked. When the beans are ready drain them well and let cool.

In the meantime, under running water rinse the lentils mix, add to small saucepan, cover the lentils with water and bring to a boil. Reduce heat and simmer for about 10 minutes, until tender but not mushy.  Drain well and let cool.

 

To make the dressing, whisk all ingredients together in a small bowl until thoroughly combined. Set aside until required.

 

Mix together the chopped onion, sun-dried tomatoes, beans and lentils mix in a large bowl.

 

Flake the tuna with a fork and stir it into the beans and lentil mixture. Stir in the chopped fresh coriander and mix well.

Pour the dressing over the lentils and tuna salad and season with salt and pepper to taste. Serve and enjoy.
