Zesty Rosemary Loaf

Delicious Italian Zesty Rosemary Bread made with soft flour “00”.

You will need:

Lamb Brand Flour ‘00’ 250g

Lamb Brand Baking Powder 2 tsp

Lamb Brand Table Salt ½ tsp

Buttermilk 240ml

Sweet Potato 200g, grated

Parmesan 2 tbsp

Lemon Juice 2 tbsp

Rosemary 1 tbsp, chopped

Lemon Zest 1 tbsp

Butter 1 tbsp, melted

To garnish:

Sprigs of rosemary

Red Onion, thinly sliced 

Red Pepper, thinly sliced

All you have to do is:

1. Preheat the oven to 190°C.

2. Oil and lightly dust the loaf tin with flour.

3. Mix together in a bowl the flour, baking powder, salt, sweet potato, Parmesan, rosemary and lemon zest.

4. Mix the buttermilk, lemon juice and butter and stir into the flour mixture.

5. Spoon the batter into a prepared loaf tin and garnish the top with the Rosemary, onions and peppers.

6. Bake for 45-55 minutes or until a skewer inserted into the middle of the loaf comes out clean.

7. Cool on a wire rack.

8. Serve sliced with lots of butter.
