Minestrone Soup

The perfect solution to a cold night in? A warming bowl of this home-made minestrone soup.

You will need:

Lamb Brand Minestra Mediterranea 200g

Lamb Brand Barley 200g

Lamb Brand Dried Oregano 1 tsp

Lamb Brand Table Salt, to taste

Lamb Brand Ground Black Pepper, to taste

Vegetable or Beef Stock 500ml

Tomatoes 400g, chopped

Carrots 100g, chopped

Red Bell Pepper 100g, chopped

Celery 100g, chopped with the leaves chopped separately

Fresh Spinach 100g, chopped

Parmesan Cheese 50g, grated

Garlic Cloves 4, crushed

Olive Oil 2 tbsp

Large Onion 1, finely chopped

Bunch of parsley, finely chopped

All you have to do is:

1. Heat the oil in a pan and add the onions, carrot, red pepper and celery.

2. Cook for 10 minutes until soft.

3. Add the garlic and cook on low heat for two more minutes.

4. Now add the stock and tomatoes and cook for 10 minutes.

5. Add the barley and minestra mediterranea and cook for a further 15 minutes or until tender.

6. Add the parsley, celery leaves, and spinach.

7. Bring back to the boil and stir for two minutes.

8. Serve with parmesan cheese.
