This simple and quick recipe brings you a traditional soup for the feast of Saint Joseph. Nevertheless this healthy and tasteful recipe with its natural ingredients is still ideal to cook all year round.

 

You will need:

Lamb Brand Fava Beans 200g

Lamb Brand Whole Green Peas 200g

Lamb Brand Cannellini Beans 150g

Lamb Brand Chickpeas 100g

Lamb Brand Red Lentils 100g

Lamb Brand Fennel Seeds 20g

Lamb Brand Table Salt to taste

Lamb Brand Ground Black Pepper to taste

Life Sun-dried Tomatoes 2, chopped

Water 2.5 L 

Fresh Spinach 900g, chopped

Fresh Wild Fennel 115g, chopped

Onion 1 medium, chopped

Croutons

Olive Oil

All you have to do is:

Soak the beans, peas and chickpeas separately for a minimum of 5 hours or overnight, changing the water from time to time if possible. Rinse, add to a big pot, and bring to a boil. Add the lentils, onion, sun-dried tomatoes, spinach, wild fennel, fennel seeds and simmer for about 40min. Season to taste with salt and pepper, and serve with the croutons. You may also drizzle some olive oil over the soup before serving.
