Tuna and Lentil Salad

This meal is meant for those who are always on the go, quick andeasy, but tasty, this recipe brings you nutrition without those extra unneeded calories.

Makes 4 sides or 2 as a meal 
Preparation and Cooking time: Approx 25 minutes

Lamb Brand Green Lentils 200g

Lamb Brand Ground Black Pepper ½ tsp

Lamb Brand Ground Cumin ½ tsp

Lamb Brand Ground Coriander ½ tsp

Olive Oil 3 tsp

Lemon Juice 1 tsp

Wholegrain Mustard 1 tsp

Garlic 1 clove, finely chopped

Onion 1 small, finely chopped

Tomatoes 2, deseeded and diced

Tuna in Oil 185g

Fresh Parsley/Coriander some, chopped

Wash lentils in running water, place in a pan, cover with fresh water and cook until soft. In a bowl mix together, oil, lemon juice, mustard, garlic, cumin and coriander for the dressing; set aside. Mix together the onions, tomatoes and lentils; add the tuna and mix together. Top with fresh parsley or coriander, drizzle with the dressing, add some pepper to taste and serve straight away.
