Vegetarian Couscous Stuffed Peppers

Serve these vibrant stuffed peppers to veggie dinner or weightwatcher guests. 

You will need:

 

Lamb Brand Couscous 140g

Lamb Brand Pine Nuts 50g 

Lamb Brand Ground Black Pepper, to taste

Lamb Brand Table Salt, to taste

Vegetable Stock 280ml

Mozzarella 150g, chopped

Cherry tomatoes 80g, halved

Red and Yellow Peppers 2 of each

Garlic Cloves 2, chopped

Parsley and Basil 2 tbsp, chopped

Olive Oil 1 tbsp

Onion 1 small, chopped

Fresh seasoning

All you have to do is:

1. Start by making the stuffing. Fry the onion, and garlic together in a tablespoon of oil then add the pine nuts and fry for 2 minutes. 

2. Add in the couscous and vegetable stock and cook for 4 minutes with the lid on. 

3. When ready, remove the lid and fluff with a fork. 

4. Mix in the cherry tomatoes, mozzarella, fresh herbs and season well with salt and pepper. 

5. Prepare the peppers by cutting halfway through. 

6. Remove any white pieces of flesh and seeds from inside and discard. 

7. Carefully fill the peppers using a spoon and place onto a baking tray. 

8. Drizzle with a little extra olive oil and season well before cooking in the oven at 200oC for 20 minutes. 

9. You can serve the stuffed peppers either hot or cold.
