Ricotta, Peas and Sultanas Pie

Final Result

This ricotta and sultanas pie is a traditional gozitan recipe which is very popular with all the family till this very day. With natural healthy ingredients and an easy method this pie will be ready in no time.


Preparation & Cooking Time: 90 minutes

Serves: 8

You will need:

For the pastry (makes approx. 900g pastry)

Lamb Brand Auntie’s Mix Flour 500g

Lamb Brand Table Salt 1tsp

Margarine 250g

Cold Water 100ml

Egg, 1 lightly beaten for brushing


For the filling

Lamb Brand Whole Green Peas 200g

Lamb Brand Sultanas 180g

Lamb Brand Table Salt to taste

Lamb Brand Ground Black Pepper to taste

Ricotta 1kg

Potatoes 500g, mashed

All you have to do is:

For the pastry

Cut margarine into small pieces and mix with flour and salt. Mix with a knife, then add water and knead until dough is not sticky. Roll out on a floured surface, fold in 3 and then roll out again.

Repeat this step for a total of 3 times.

Cover dough with a piece of stretch and seal and leave to rest for about 15 minutes. 


For the filling

Rinse the green peas well under running water and add to a small saucepan, cover with water and bring to the boil. Simmer the peas gently till cooked. From time to time you might need to add hot water so as to prevent the peas from drying. (Pre-soaking peas will reduce the cooking time considerably) When ready drain them and let cool.


In a deep container prepare the potato mash according to packet instructions and then add the ricotta, peas, sultanas, eggs, salt and pepper and mix together.


Roll the dough according to dish size and cover the bottom and sides with the dough. Pour the ricotta mixture into dish and cover the top with the remaining dough.

Trim the edges, brush top with the beaten egg and bake in a preheated oven at 200°C for about 45 minutes or until golden.
