Ricotta & Avocado Ravioli with a Tomato & Pine Nut Salsa

Try out these ravioli with a difference, they are healthy and refreshing. The taste is amazing, hope that you will enjoy them too same as we did :)

You will need:

For the dough

Lamb Brand Semolina 300g

Lamb Brand Flour "00" 200g

Lamb Brand Salt 1 tsp

Egg Yolks 6

Olive Oil 2 tbsp

Whole Egg 1

For the filling

Ricotta 200g

Cloves Garlic 2

Tomatoes 2

Red Onion 1

Chopped Basil 1 tbsp

Chopped Dill 1 tsp

Ripe Avocado 1/2

Red Chilli 1/2

All you have to do is:

For the pasta dough, mix all the ingredients together than add approximately 3 tablespoons of warm water to bind the dough. Keep covered with cling film all the time in the fridge while not using. Dice the avocado, mash it well with the ricotta and season well, use a piping bag or a spoon to fill the ravioli. Meanwhile prepare the salsa, Dice the onion, chop the garlic, chilli and sauté without browning in a little olive oil. Remove the seeds from the tomato and dice the wedges, chop the dill and add to the cooked onion mixture, toss than remove from heat.
