Pea, Strawberry and Quinoa Salad

This quick and easy salad looks so pretty with the vibrant colours of the strawberries and peas. Served warm or chilled, this makes a delicious light lunch/dinner meal or the perfect accompaniment to poultry dishes or your favourite soup.

Serves 2

You will need:

Lamb Brand Quinoa (Red or White), rinsed and drained 150g

Lamb Brand Salt and Pepper, pinch

Garden Peas, fresh/lightly steamed (for 1-2 minutes) 250g

Large Strawberries, sliced 8

Feta Cheese, crumbled 100g

Fresh Mint, finely chopped 2 tbsp.

For the Dijon Vinaigrette:

Extra Virgin Olive Oil, 60ml

Balsamic Vinegar, 2 tbsp.

Dijon Mustard, 1 tsp.

All you have to do:

  1. In a small saucepan, bring 300ml of water to a boil. Then add the Lamb Brand Quinoa, cover and cook on low heat until the quinoa is tender, about 12-15 minutes. 
  2. In a large bowl, toss the quinoa with the peas, strawberries, feta and mint leaves. 
  3. Whisk together the olive oil, balsamic vinegar and mustard. 
  4. Drizzle the dressing over the salad and season with salt and pepper.
