Vegetarian Sliders with an Aubergine and Avocado Salsa

These little sandwiches pack a whole lot of flavour! Add a hint of balsamic vinegar for the perfect finishing touch!

You will need:

For the burgers

Lamb Brand Chickpeas 200g, cooked

Lamb Brand Plain flour 50g

Lamb Brand Ground Cumin 2 tsp

Lamb Brand Chopped Parsley 1 tbsp

Lamb Brand Ground Ginger 1 tbsp

Cheddar Cheese 100g, grated

Slider Buns 6 small

Lollo Bianco Leaves 6

Garlic Cloves 2

Onion 1

 

For the salsa

Large tomato 1

Aubergine 1/2

Avocado 1/2

All you have to do is:

1. Dice the onion and chop the garlic and sauté together with the cumin and ginger.

2. Once cooked add the chickpeas in a large bowl and crush together with parsley and seasoning.

3. Add flour and form small patties, shallow fry until browned.

4. For the salsa, dice the aubergine in small cubes and sauté until softened.

5. Dice the avocado and tomato also and toss them for a few minutes, season and remove from heat.

6. Open up the bread and toast lightly, place the lettuce at the bottom, patty, salsa, cheese and cover again.

7. Insert a kebab stick to hold it together and place in hot oven to melt cheese before serving.
