Grilled Polenta Crackers with Roasted Pepper Salsa

This is a great alternative to Bruschetta Bread and anyone on a gluten free diet.

You will need:

Lamb Brand Polenta 24 oz tube, cut into 1/2-inch slices*

Lamb Brand Red Pepper Flakes 1/2 tsp

Red Peppers 3, roasted

Capers 2 tbsp

Garlic Clove 1

Flat-leaf parsley 3/4 cup

White Onion 1/2

Calamata Black Olives 1/2 cup, pitted

Extra-virgin olive oil, 1/4 cup 

*prepared as per packet instructions

All you have to do is:

1. Preheat grill pan to high.

2. Slice polenta and brush lightly with oil. 

3. Grill 2 or 3 minutes on each side to score the cakes and warm them.

4. Place peppers, olives, capers, parsley, onion, garlic and red pepper flakes in processor and pulse the power to chop salsa. 

5. Top polenta with spoonfuls of salsa and serve!
