Barley with Spinach

A creative way of using barley which results in a meal that is healthy, filling and flavourful. 

 

Preparation & Cooking Time: 45 minutes

Serves: 4

 

You will need:

Lamb Brand Barley 200g

Lamb Brand Table Salt, to taste

Lamb Brand Ground Black Pepper, to taste

Life Soft Apricots 90g, chopped

Pork Mince 150g

Fresh Spinach 120g, roughly chopped

Onion 1 small, finely chopped

Vegetable Stock,1litre

Extra Virgin Olive Oil 3tbsp

White Wine ½ glass (app 58 ml)

Fresh Parsley a handful, finely chopped

All you have to do is:

Heat one tablespoon of oil in a large saucepan. 

Add the pork and 1 onion. Stir until the onion is soft and the pork has browned. 

Stir in the barley and spinach and cook for a couple of minutes. Add the white wine and allow time to evaporate. Add the chopped dried apricots.

Gradually add the stock using a ladle. Wait until each ladleful has been absorbed before you add the next. Continue until the barley is cooked, about 30 minutes. 

Remove from heat, mix in remaining oil, parsley and season with salt and pepper. 

Serve immediately.
