Kale Quinoa Patties

Transforming leftover quinoa into hearty little savory cakes is brilliant. If you do not have kale, try spinach, broccoli, or mushrooms.

You will need:

Lamb Brand White Quinoa 500g, cooked and cooled

Lamb Brand Bread Crumbs 150g

Lamb Brand Garlic Granules 2 tsp

Lamb Brand Cooking Salt, 1 tsp

Parmesan Cheese 200g, grated

Fresh Chives 100g, chopped

Kale 4 bunches, cleaned, deveined, finely chopped

Eggs 3, beaten

Olive Oil 2 tbsp, plus more for frying

Onion 1/2, finely diced

All you have to do is:

1. Combine quinoa, eggs, Parmesan, chives and salt in a medium mixing bowl.

2. Heat 2 tablespoons olive oil in a skillet on medium heat then sweat onions and garlic, approximately for 3 minutes.

3. Add kale to a pan and cook until kale is bright green and soft.

4. Add kale mixture to quinoa mixture, then add breadcrumbs and stir to combine.

5. Place a clean pan on medium heat and add enough oil to coat the bottom of pan.

6. Form patties using ½ cup of quinoa mixture and place patties in skillet being careful not to splash hot oil or overcrowd the pan.

7. Fry until golden brown on each side, approximately 5 minutes per side.

8. Remove patties, drain on paper towel and serve.
