Roasted Eggplant & Gardinira Mix

Try out this mini pizza with a difference. Quick and easy to prepare and ideal for anyone who is following a vegetarian diet!

You will need:

Lamb Brand Deep Pan Pizza Mix 440g - 4 x 110g pizza balls

Char-grilled Eggplant 320g, chopped coarsely

Gardinira Mix 170g

Sun-Dried Tomatoes 90g (for pesto)

Seeded Kalamata Olives 75g

Cheddar Cheese Grated 50g

Fresh Oregano Leaves loosely packed

All you have to do is:

1. Preheat oven 220C/200C fan-forced.

2. Place pizza bases on oven trays. Spread bases with sun-dried tomato pesto, top with eggplant, olives and gardinira, sprinkle with cheese. Cook, uncovered, for about 15 minutes.

3. Sprinkle pizzas with oregano before serving.
