Oat Pancakes with Curried Peanuts & Ricotta

Try out these savoury oat pancakes and top them off with some curried peanuts and ricotta. Thumbs up for this quick, easy and delicious recipe!

You will need:

Lamb Brand Medium Oats 90g

Lamb Brand Semolina 2 tbsp

Lamb Brand Cumin Seeds 1 tsp

Lamb Brand Ground Coriander 1 tsp

Lamb Brand Curry Powder 1 tsp

Lamb Brand Chilli Flakes ½ tsp

Lamb Brand Turmeric ¼ tsp

Lamb Brand Raw Peeled Peanuts

Water 310ml

Lemon Juice 2 tbsp

Small Onion 1, finely chopped

Handful Spinach, chopped

Small Red Bell Pepper, finely chopped

Garam Masala ½ tsp

Fresh ricotta

Fresh coriander

Minced garlic

Vegetable oil

All you have to do is:

Grind the oats into flour. Mix the oats, semolina, chilli and spices, add the lemon juice and mix in the water into a batter consistency. Mix in the onion, chopped spinach and bell peppers, allow resting for 5 minutes. Pour ladle spoons of batter in a greased, hot, non-stick pan.

To make the curried ricotta: Place the peanuts on a roasting tray, drizzle with oil, sprinkle with the curry and spices and roast. Let cool and crush. Mix the crushed peanuts with the ricotta and chopped coriander. Serve together with the cooked pancakes.
