Duo of Sesame Prawns & Maltese Sausage on Toast with a Honey Soy Sauce

                                                   

You will need:

For the prawn toast

Lamb Brand Sesame Seeds 4 tbsp

Lamb Brand Cornflour 1 tsp

Lamb Brand Grated Ginger 1 tsp

Cocktail Prawns 300g, well drained

Bread 3 slices

Garlic clove 1

Egg White 1

Sesame Oil 1 tbsp

For the Maltese sausage toast

Lamb Brand Hazelnuts 12, roasted and crushed

Lamb Brand Cornflour 2 tsp

White Toast 3 slices

Maltese Sausage 1

Egg White 1

Walnut Oil 1 tbsp

For the honey and soy sauce

Lamb Brand Grated Ginger ½ tsp

Honey 6 tbsp

Soy sauce 6 tbsp

Garlic Cloves 2

Knob Butter 1

Onion ½

All you have to do is:

1. To make the prawn toast, blend well in a paste the ginger, garlic, egg white, cornflower, sesame oil and prawns.

2. Meanwhile toast lightly the bread without coloring and press the paste well on it, sprinkle with sesame and press.

3. Fry in a sauté pan until browned and cut in shapes.  

 

4. To make the sausage toast, blend well the Maltese sausage, cornflower, egg white and walnut oil in a paste, toast the bread lightly and press the paste well, sprinkle with hazelnut and press again.

5. Shallow fry until browned.  

 

6. To make the sauce, soften the chopped onion and garlic in a pan, add the honey and ginger and bring to the boil till it starts browning, add soy sauce mix well and remove from heat.
