Semolina is a coarse pale yellow flour, made from durum wheat and is commonly used as the base for dried products such as pasta because of its high gluten content which gives a pleasant taste and helps maintain its shape during the cooking process.
 
This low-fat, high carbohydrate food offers a lot of energy along with a variety of other nutrients and can be safely incorporated into a well-balanced diet.
 
Semolina can also be used quite effectively to thicken stews, as a hot cereal or as a cooked meal on its own and is also added to biscuits to give that crunchy texture such as the traditional galletti.  
 
As an alternative to corn meal, Semolina can be used to flour the baking surface to prevent sticking.
