Heavenly Light Pear Cake with Almonds

A scrumptious and gooey pear and almond cake. Pears and almonds make a heavenly mouthwatering match in this cake! 

All you need:

Lamb Brand Castor Sugar 110g

Lamb Brand Plain flour 75g

Lamb Brand Flaked Almonds 50g

Lamb Brand Ground Almonds 40g

Lamb Brand Baking Powder 1 ½ tsp

Lamb Brand Icing Sugar 1 tbsp, for dusting

Ripe Fresh Pears 750g 

Olive Oil 75g

Eggs 3, lightly beaten

Juice of a lemon

Pear Liqueur 2 tbsp(optional)

All you have to do:

1. Start by peeling, coring and roughly chopping the pears into cubes. 

2. Squeeze over the lemon juice to stop them from discolouring and add in the liqueur if using and put aside. 

3. Line a 22cm spring bottomed cake tin with non-stick baking paper and brush with a little olive oil. 

4. Place the flour, ground almonds, baking powder and sugar in a bowl and gently mix in the olive oil and beaten eggs. 

5. Finally, fold in the pears and any juices and pour the cake mixture into the prepared cake tin. 

6. Sprinkle over the flaked almonds and bake in the oven at 180oC for 50 minutes, or until a skewer inserted comes out clean. 

7. Remove from the oven and allow to cool down completely before serving dusted with icing sugar.
