Blueberry Pancakes with Apple Chutney

Breakfast is the most important meal of the day, so refresh your morning with these delicious Blueberry pancakes.

You will need:

Lamb Brand Self-raising Flour 300g

Lamb Brand Castor Sugar 55g

Plain Yoghurt 300ml

Blueberries 150g

Maple Syrup 125ml

Butter 50g, melted

Apples 2, green & red

Eggs 2

Cooking Oil

All you have to do is:

1. Sift flour and sugar into large bowl.

2. Whisk eggs, plain yoghurt and butter in a large jug.

3. Gradually whisk egg mixture into flour mixture until smooth.

4. Stir in the berries and pour the batter into a large jug.

5. Gently butter down a frying pan. Pour 50ml batter for each pancake into heated pan (depending on the size of the pan, portion out the batter).

6. Cook pancakes until bubbles start appearing on the surface. Turn and brown other side. Cover to keep warm.

7. Repeat steps 5 and 6, wiping out pan between batches, to make a total of 18 pancakes.

8. Meanwhile, heat a small deep pan to prepare chutney; warm up apple chunks with a tablespoon on maple syrup until a nice smile comes out.

9. Drizzle pancakes with syrup and serve with apple chutney
