Fruity Vegetarian Bulgur & Quinoa Salad

This Bulgur & Quinoa Salad with Dried Fruits is a great healthy side dish that the whole family will love. It’s healthy, refreshing and tasty too.

You will need:

Lamb Brand Bulgur & Quinoa Blend, 200g

Lamb Brand Chickpeas 200g, cooked

Lamb Brand Raisins 75g

Lamb Brand Dried Apricots 75g, chopped

Lamb Brand Slivered Almonds 5 tbsp

Lamb Brand Coconut 3 tbsp

Lamb Brand Mint ½ tsp

Lamb Brand Salt ½ tsp

Lamb Brand Ground Black Pepper ¼ tsp

Lamb Brand Rosemary ¼ tsp

Fresh Lemon Juice 3 tbsp

Olive Oil 1 tbsp

All you have to do is:

1. Combine the olive oil, lemon juice, salt, pepper, rosemary and mint in a large bowl.

2. Stir all ingredients with a whisk and set aside.

3. Bring salted water to a boil. Pour in 200g of Lamb Brand Bulgur & Quinoa Blend and let it cook over low heat for 12 minutes. Drain.

4. In the mean time chop the dried apricots and pour some hot water over the raisins and let sit for 5-10 minutes. Drain.

5. Add the bulgur and quinoa blend and the remaining ingredients to the juice mixture and toss well to coat.

6. Cover and chill.
