Carrot Orange Cake

A mixture of two classic cake recipes with an elegant modern look! 

All you need is:

Lamb Brand Self-Raising Flour, 200g

Lamb Brand Oats, 100g

Lamb Brand Corn Flour, 1 tbsp.

Lamb Brand Bicarbonate of Soda 1 tsp.

Lamb Brand Ground Cinnamon, 1 tsp

Lamb Brand Baking Powder, 1/2 tsp.

  • Mix these 5 ingredients together in a large bowl

Grated carrots, 180g

Grated orange zest, 2

  • Mix these 2 ingredients together in another bowl

Lamb Brand Golden Raisins, 200g

Sunflower oil, 75ml

Eggs, 4

Squeezed Orange Juice, 2

  • Blend these 4 ingredients together until the mixture is smooth and consistent

All you have to do is:

  1. Preheat oven to 170C 
  2. Prepare a 23cm cake dish with baking spray 
  3. Organise the three sets of ingredients into 3 separate bowls. 
  4. Add the carrot mix to the flour mix and combine making sure that the carrots are covered with the flour. Add the blended liquids. 
  5. Fold in using a large metal spoon. 
  6. Pour the cake batter into the prepared cake tin and bake for 35 minutes without opening the oven. Check with a wooden skewer and if required bake for a further 5 to 10 minutes. Usually this is ready in 40 minutes but it depends on your oven and environmental conditions.
