What is more Maltese than a traditional Maltese Pudina? Try out this delicious maltese dessert using a large variety of Lamb Brand products.

Makes: A baking tray of 35cm x 25cm x 6cm

All you will need is:

Lamb Brand sugar, 125g

Lamb Brand Ground Almonds, 75g

Lamb Brand Coconut, 50g

Lamb Brand Sultanas, 25 g

Lamb Brand Candied Peel, 25g

Lamb Brand Dark Chocolate, 25g

Lamb Brand Mixed Spice, 1/4 tsp.

Lamb Brand Cinnamon, 1/4 tsp

Lamb Brand Nutmeg, pinch

Rayners Vanilla Essence, 4 drops

Loaf of bread and you can use up your stale bread, 1

Butter (melted), 150g

Custard powder, 70g

Eggs, 4

Cocoa powder, 4 tbsp.

Jam, 2 tbsp.

Lemon Zest, 1/4

Orange Zest, 1/4

Liquor, 1 shot

Milk, enough to bring the mix dropping consistency and more for soaking the bread

All you have to do is:

  1. Soak the stale bread in milk for at least an hour and then drain it thoroughly by squeezing the milk out using clean hands. 
  2. Melt the butter in the microwave and mix all the ingredients together in a large mixing bowl. If you are making a large quantity you can mix by using the k beater and an electric mixer or using a large mixing bowl. 
  3. Spray the baking dish with baking spray and then pour in the mixed pudding batter. 
  4. Bake at 190 C for about 45 minutes to an hour.
